Baked Apple Pancakes
1 tbsp corn oil margarine
2 large or 3 small apples, peeled and thinly sliced (4 cups)
2 eggs, separated
3/4 c. nonfat, skim milk
1/2 tsp vanilla extract
1 egg white
2 tbsp packed brown sugar, pushed through a sieve
1/2 tsp ground cinnamon
1/4 tsp salt
1/2 c. plus 1 tbsp unbleached all-purpose flour
3/4 tsp baking powder
Preheat oven to dg425. Melt margarine in oven in 10-inch pie plate,
quiche dish or oven-proof skillet. Remove from oven and add apple
slices. Return to oven and bake 20 minutes or until apples are
slightly cooked.
While apples are cooking, combine egg yolks, milk and vanilla, mix
well and set aside. In a separate bowl, beat egg whites just until
they form soft peaks. In another bowl, sift together brown sugar,
cinnamon, salt, flour and baking powder and mix well. Pour milk
mixture, all at once, into the dry ingredients mixing just until
moistened. The batter will be lumpy. Fold in egg whites. Pour the
batter over the apples and bake until well-browned and puffed, about
20-25 minutes. Cut into six wedges and serve immediately.
