Exploding Cranberry-Orange Relish
Makes 8 servings

It may seem rather boring and obvious to submit a recipe for cranberry
relish, but this recipe is so easy and delicious that I wanted to share it.
I picked it up at a sample day at the Whole Foods Market in Madison, Wis.,
about 10 years ago. The recipe also calls for an optional 2 tablespoons
seeded and diced jalapeno peppers, but as a native New Englander, I've never
been able to bear adding hot peppers to my cranberry sauce! -- Susan

1 pound whole cranberries
2 tablespoons orange zest
1/2 cup orange juice
1 cup honey or sugar
1/2 cup almonds, optional

Cook cranberries, orange zest, orange juice and honey or sugar in a saucepan
over medium heat until cranberries explode (burst), about 10 minutes. Add
almonds, if desired, and cook for 5 more minutes. Enjoy warm, chilled, or
room temperature.
