PEAR PROVOLONE AND ROCKET SALAD

 

   1 large hand rocket

   2 tablespoon fresh mint

   2 tablespoon fresh basil

   1/4 pint champagne vinaigrette

   6 thin slices comice pear; (6 to 8)

   7 strips provolone cheese; approx 2 x 1/2 inch (7 to 8) thick

 

Champagne vinaigrette:

   1/2 pint mild olive oil

   2 1/2 fl champagne vinegar

   1/4 pint champagne

   Salt and ground black pepper

   Sugar if required

 

   Whisk the vinaigrette ingredients together adding sugar if necessary. Toss 
the rocket and herbs with half of the vinaigrette. Top with the pear and cheese

and drizzle with the remaining vinaigrette.
