Mexican Lasagna 1pkg taco seasoning 1lb ground beef 1c salsa 14 oz can tomato sauce 16 oz cottage cheese or ricotta 2 eggs 1 1/2t oregano 4c Mexican cheese mix or sharp cheddar, grated 1 can refried beans flour or corn tortillas Brown ground beef and drain off fat. Mix in taco seasoning packet, tomato sauce and the salsa and simmer 5 minutes. In a bowl mix eggs and cottage cheese or ricotta together and add the oregano. Spray with non-stick spray a 13x9 inch baking pan. Warm up the refried beans to make it easier to spread them. Preheat oven to 375. Layer in the bottom of baking dish tortillas so they cover the bottom. Top with the cottage cheese mixture, half the ground beef and half the grated cheese. Add the next layer of tortillas, top with the refried beans, remaining ground beef and grated cheese. Bake 30-35 minutes until cheese is bubbly. Good served with sour cream, sliced black olives, green onion slices and guacamole. Serves 6-8. I prefer this with flour tortillas and ricotta cheese, my husband likes it with the corn tortillas.
