Grandmother*s Swiss Steak Overall Rating * * * * * Description A recipe that*s been passed down for generations. Ingredients 2 1/2 pounds boneless chuck steak, 1 inch thick 3 TBSP flour 2 tsp salt 1/8 tsp pepper 1/2 cup onion, chopped 1 cup tomatoes 1/4 cup tomato paste Directions Cut most of fat away from edge of steak. Mix flour, 1/2 tsp salt & pepper. Pound into both sides of steak. Grease a hot heavy large skillet with a little butter. Add steak & brown on both sides. Mix together the remaining 1 1/2 tsp salt, pepper, onion, green pepper, celery, tomatoes (including liquid in can) and tomato paste and add to skillet. Simmer tightly covered until meat is extremely tender,about 2 hours. Makes 6 servings with plenty of sauce....ENJOY. Prep time: 30 minutes __._,_.___
