Chocolate Covered Surprise Cookies Ingredients: Cookies; 3/4 cup sugar 3/4 cup butter or margarine, softened 1 egg 1-1/2 tsp. vanilla 1-3/4 cups all-purpose flour 1/3 cup unsweetened cocoa 2 tsp. baking soda 1 jar (10 oz.) maraschino cherries, drained, reserve juice, halved Frosting; 1 pkg. (6 oz.) semisweet real chocolate chips 2 tbsp. reserved cherry juice Directions: Heat oven to 350º F. (175º C). Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy, 2 - 3 minutes. Add egg and vanilla, continue beating until well mixed, 1 - 2 minutes. Shape dough into 1" balls. Place 1" apart on ungreased cookie sheet. Press cherry half into center of each cookie. Bake 8 - 10 minutes or until set. Cool completely. Meanwhile, combine frosting ingredients in 1 qt. saucepan. Cook over low stirring occasionally, until chips are melted and frosting smooth, 4 - 5 minutes. Place 2 tsp. frosting on top of each cookie to hide cherry half.
