Toasted Coconut Toffee Cookies
Ingredients:
1 cup     each sugar; firmly packed brown sugar; butter or
margarine, softened
3            eggs
1 tsp.     each almond extract, vanilla
3 cups   all purpose flour
1 tsp.     baking soda 
1-3/4 cups  toasted coconut
1 pkg.    (10) oz. English toffee bits
Directions:
       Heat oven to 350º F.  (175º C).  Combine
sugar, brown sugar and butter in large bowl.  Beat at medium speed,
scraping bowl often, until creamy, 1 - 2 minutes.  Add eggs, almond
extract and vanilla.  Continue beating until well mixed, 1 - 2
minutes.  Add flour and baking soda.  Reduce speed to low, beat
until well mixed, 1 - 2 minutes.  
By hand stir in coconut and toffee bits.  Drop by rounded tbsp. 2"
apart on ungreased cookie sheet.  Bake 8 - 11 minutes or until edge
are golden brown.  Let stand 1 minute, remove from cookie sheet and
cool completely.  Makes 5 dozen.
