Mexican Chicken Pot Pie This recipe uses cornbread.
Ingredients 3 C. cooked diced chicken 1 20 oz. jar of salsa 1 can corn, drained 2 C. shredded cheddar cheese 1/2 C. sour cream 2 tsp. cumin 1 tsp. garlic powder 1 box of Jiffy corn bread mix Directions Cook chicken and dice. Add the salsa, corn, cheese, mix well. Pour ingredients into a lightly sprayed pie plate. Mix the corn bread according to the directions;(Mix the from scratch) with the sour cream, cumin and garlic powder. Put the cornbread mixture on top of the chicken mixture.
