Merrigold Muffins

3 eggs
2/3 cup low-fat yogurt
1/3 cup vegetable oil
2 tsp vanilla
3 cups grated carrots
1 cup grated peeled apple
2 cups all-purpose flour
1 cup raisins
¾ cup packed brown sugar
2/3 cup shredded coconut
4 tsp cinnamon
2 tsp baking soda
½ tsp salt

In bowl, whisk together eggs, yogurt, oil, and vanilla: stir in carrots and
apple.

In large bowl, stir together flour, raisins, sugar, coconut, cinnamon,
baking soda and salt:
Pour carrot mixture over top and stir just until blended.

Scoop in to 18 greased muffin cups, filling almost to top.
Bake at 350 for 30-35 minutes or until tops are firm to the touch.
Let cool in pan for 5 minutes: remove to racks and let cool completely.
