FRESH SUMMER SQUASH CASSEROLE 1 pound fresh summer squash 1 cup onions or shallots, chopped 1/4 cup mushrooms 1/2 cup quick oats 1 each egg, beaten Salt and pepper to taste 1 teaspoon salt 1/2 cup chopped celery 1/4 cup pimento 3/4 cup milk 2 each hard cooked eggs, chopped Ritz crackers, crumbled Cover squash with water, cook until tender. Drain and set aside. Sauté celery, shallots, mushrooms and pimento. Add to squash. Add remaining ingredients, except cracker crumbs and place mixture in buttered casserole. Bake at 400 degrees for 15 minutes. Remove from oven, cover with ritz cracker crumbs and bake additional 15 minutes. A Great Meal Idea!
