Saucy Artichoke Hearts
4 boxes frozen artichoke hearts
1/2 med. onion, cubed
1 large clove garlic, minced
6 or 7 crimini mushrooms, sliced
salt and pepper to taste
Sauce:
1 cup mayonnaise (I used reduced fat)
1 tablespoon curry powder
juice of 1/2 lemon
Sauté onion, mushrooms and garlic in about 1 tbsp. olive oil until
onion is translucent. Add artichoke hearts and continue sautéing and
stirring occasionally. After about 6 minutes, add Marsala and cook until
nearly all the Marsala is gone.
Meanwhile, mix sauce ingredients together. Pour over artichoke mixture,
& cook until the sauce is heated.
Serves 4 to 6.
