Smothered Potatoes

1 tablespoon olive oil
1 cup thinly sliced onions
1/4 pound walnut halves, about 1 cup
1 pound new potatoes, quartered and roasted
2 teaspoons chopped garlic
2 cups veal reduction
salt and freshly ground black pepper

In a large saute pan, over medium heat, add the oil. When the oil is hot,
add the onions. Season with salt and pepper. Saute for 2 minutes. Add the
walnuts and continue to saute for 1 minute. Add the potatoes. Season with
salt and pepper. Continue to saute for 2 minutes. Add the garlic. Saute for
1 minute. Add the reduction and bring the mixture to a simmer. Cook for 2
minutes. Remove from the heat and serve hot. 4 servings.
