Vegetable Soup

3 lbs. shank of soup bone or 3 to 5 lbs. hen
4  quarts water
2 T. salt
1 can (#2) tomatoes
1 cup shredded cabbage
1  cup diced carrots
2 cups diced potatoes
1 1/2 cups diced celery
2  medium onions, diced
1 small handful allspice

Wash meat or hen, then  place in large kettle. When water comes to a boil, 
skim the top,removing all the  sum. Add ingredients and let simmer over low 
flame for 2 hours. 
If desired, add some mac to the pot or add some cooked rice in a bowl add  
soup over rice.
