Foil Pack Taco Chicken 4 small boneless chicken breast halves (about 1 pound) 4 tsp taco seasoning mix 1/2 lb. red potatoes peeled and thinly sliced 1/2 c. thick and chunky salsa 3/4 c. shredded four-cheese Mexican style cheese 1/4 c. sour cream
Preheat oven to dg450. Sprinkle chicken with seasoning mix. Place 1/2 cup of potatoes onto center of each of four large sheets of heavy-duty foil. Top evenly with chicken, salsa and cheese. Bring up foil sides; double fold top and both ends to seal packet leaving room for heat to circulate inside. Place in a baking pan. Bake 30 to 35 minutes, or until chicken is cooked through. Remove packets from oven. Let stand five minutes. Cut slits in foil to release steam before opening. Serve with sour cream.
