Banana Coconut Cake
1/2 c. butter or margarine
1 c. sugar
3 eggs
1 c. mashed, ripe bananas
1/2 c. buttermilk or yogurt
1 tsp vanilla
2-1/4 c. flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Grease and flour a 9-inch springform pan.
Cream butter and sugar. Beat in eggs, one at a time. Add bananas
buttermilk or yogurt and vanilla.
Sift dry ingredients together and beat into banana mixture to blend.
Pour half of batter into pan. Sprinkle with half of coconut topping.
Add remaining batter and top with remaining topping. Bake at dg350 for
45 to 50 minutes.
Coconut Topping
1 c. coconut
1 c. brown sugar
1-2 tsp cinnamon
Stir to combine.
