Roast Chicken (low carb, slow cooker)

1 chicken, 5 lbs.
1 t.  oil
1 t. Italian herbs
1/4 t. pepper

Brush chicken with oil.  Sprinkle with herbs and pepper. Place in slow 
cooker and add 1/4 cup water.  Cover. Cook on low 8 to 10 hours or until thigh 
temperature reaches 170 degrees.  Remove skin before serving.
