SHERRY CREAM FRUIT CAKE
   2 cups semi-sweet chocolate morsels
   2 cups chopped pitted dates
   2 cups chopped pecans
   2 cups whole candied cherries
   1 cup mixed candied fruit
   1/2 cup cream sherry
   6 eggs
   1 cup sugar
   2 teaspoons pure vanilla extract
   3 cups all-purpose flour
   2 teaspoons salt
   In
 large bowl, combine semi-sweet chocolate morsels, dates, pecans, candied 
cherries
and candied fruit; add sherry and let stand 1 hr, stirring occasionally. Preheat
oven to 325 degrees. In large bowl, beat eggs until thick lemon colored {about 5
minutes}. Gradually beat in sugar and vanilla extract; set aside. In medium 
bowl,
combine flour and salt. Stir into fruit mixture; mix well. Fold in egg mixture. 
Spread
into greased floured 9-inch tube pan. Bake at 325 for 1 hour. Cool 15 minutes; 
remove
cake from pan. Cool completely on wire rack.  Enjoy.
