Summertime Stove-Top Meatloaf
Have you ever had a hankering for meatloaf but it's just too hot to turn the oven on? Try this recipe. 1 (8 ounce) can tomato sauce 8-16 ounces water 1 (16 ounce) can tomatoes 3-4 bay leaves 2 lbs ground sirloin 1 bell pepper diced 1 chopped onion 2 beaten eggs 1/2 cup flour garlic powder salt and pepper In a dutch oven, combine the tomato sauce, water and tomatoes. Mix well. Sauce should be diluted until like soup. You want 2-3 inches of liquid in pot. Add the bay leaves. In a bowl combine and mix well: the ground sirloin, onion, bell peppers and eggs. Sprinkle the flour over the meat to hold everything together. Add seasoning to taste. Mix well. Shape the meat mixture into three "loaves" or balls. Place in Dutch oven. Bring to a boil, reduce heat and simmer slowly, covered, about 1-1/2 hours or until done. Check occasionally to make sure sauce is not getting real thick. Add water as necessary. This freezes nicely. --~--~---------~--~----~------------~-------~--~----~ Access the Recipes And More list archives at: http://www.mail-archive.com/recipesandmore%40googlegroups.com/ Visit the group home page at: http://groups.google.com/group/RecipesAndMore -~----------~----~----~----~------~----~------~--~---
