Hamburger and Rice Casserole
 
1 pound ground beef
1 medium onion,  chopped
1/2 cup uncooked rice
Salt & pepper to taste
2 cans  Rotel tomatoes
1 large bell pepper, chopped
1/4 teaspoon chili  powder
 
Brown onion and bell pepper in a small  amount of fat in skillet. Add 
hamburger and cook until meat is done. Add  tomatoes, rice and seasoning; put 
in 
covered baking dish. Bake at 375 degrees  for 45 minutes.
