POTATO-CABBAGE SOUP WITH HAM

Makes 4 servings

1/2 stick (1/4 cup) butter
3 medium potatoes, peeled, cut into 1/4-inch dice
2 carrots, cut into 1/4-inch dice
1 bunch green onions, coarsely chopped
3 tablespoons flour
4 cups shredded cabbage
2 cups water
1 can (14.5 ounces) chicken broth
1 teaspoon dried dillweed
1/2 teaspoon ground pepper
1/4 pound lean ham, chopped

Melt the butter in a medium saucepan over medium heat. Add potatoes, carrots
And green onions. Saute until onions are wilted, about 5 minutes. Stir in
Flour. Cook 1 minute.

Add cabbage, water, broth, dillweed and pepper. Bring to a boil. Reduce heat
To medium-low. Cover and simmer 20 minutes, stirring occasionally.

Just before serving, gently mash some of the vegetables with a potato masher
To thicken the soup, if desired. Stir in ham.
