Kentucky Pound Cake

 

Serves: 16

Robbie's Recipe

 

CAKE

4 large eggs (separated)

1 1/2 cups Pure Wesson Vegetable Oil

2 1/2 cups self-rising flour

2 cups sugar

2 1/2 teaspoons cinnamon

1 tablespoon vanilla extract

2 cups chopped nuts

1 small can crushed pineapple (drained)

1 small can applesauce (8 oz.)

 

ICING

2 sticks butter (melted)

2 light brown sugar

1/2 cup evaporated milk

2 cups chopped, toasted pecans

 

Mix together all ingredients, with exception of egg whites.

Blend well.  Beat egg whites until stiff; fold into batter.

Grease and flour a 10-inch tube pan.  Pour batter into pan and

bake at 325° for 1 hour  and 20 minutes.  PLACE IN COLD OVEN.

Mix together all icing ingredients, in a small saucepan.  Cook

for 5 minutes, stirring constantly.  Remove from heat and stir in

pecans.  Cool and spread over cake.  Store in refrigerator.
