Red Cabbage Casserole

 

8 c shredded red cabbage

1 medium onion, chopped

1/4 c sugar

1 T canola oil

1 t salt

1 t lemon juice

1 to 2 medium tart apples, chopped

1/4 c  red currant jelly

 

In Dutch oven, combine first six ingredients.

Cover, cook over medium heat 10-15 mins til cabbage is

crisp-tender, stir occasionally.

Add apples; cook 10-15 mins longer til cabbage and apples are

tender.

Stir in jelly til melted.

8-10 servings.
