Edee's Haitian Sweet Potato Pudding Recipe
Category: Caribbean Deserts EDEE Ingredients: 2 1/2 cup Hot, cooked sweet potatoes, mashed 2 x Eggs 3 tbl Shortening 1/2 cup Milk 1 tbl Flour 2 cup Sugar 2 tsp Baking powder 1/4 tsp Salt 1/4 tsp Nutmeg 1/2 cup Butter 1 cup Brown sugar Instructions: Mix sweet potatoes with well-beaten eggs. Add shortening and milk, mixing thoroughly after each addition. Stir together flour, sugar, baking powder, salt and nutmeg. Add to first mixture, beating well. Pour into 1-quart casserole lined with mixture of brown sugar and butter. Bake at 350 for approximately 1 hour.
