On the non-technical side: Sure, that's a great idea, and Linux is a
perfect choice for what you're doing. However, consider leaving your ISP as
a third backup mail server. If it's your Internet connection that goes
down, both of your in-house servers could be up and running, but people will
get bounce messages. If you leave your ISPs server in your MX records
(lower priority), they'll get queued there.
Just a thought.
