My advise would be to stop using up2date, or tell it not to upgrade apache
on you then. I currently take a simple (and more labor intensive) approach
to upgrading so I can't tell you how to do this.
My approach is:
1. subscribe to the redhat-announce list. This low volume list announces
updates.
2. When a update has occured, check and see if you really need it, and
apply it manually. If it's not a security fix, and it ain't broke, then
don't fix it.
3. stay subscribed to this list as long as you can bear the volume. You
can always get a lot of help here.
You will find that many updates are not critical for you, and those that
are critical are best done manually anyway so you can make sure they are
done at a good time to allow you to recover from a problem (should it
occur).
hth, and sorry for your pain.
