You can stick with MIS but I suggest you cross over and take numerous CS
electives. Blend the two and form your own opinions about technologies.
There's no magic answer or correct curriculum. It's all blood, sweat, and
tears on your behalf, not so much the degree you persue.

Make sure you learn C/C++ and/or Java because a great many things build on
that core knowledge. A great many scripting languages and tools use the C
syntax. Avoid tools that write code for you. You should be able to develop
using text files and a compiler. IDEs, GUI tools, and debuggers should be
considered a luxury while you're learning.

Join a Linux Users Group and get to know other parts of the computer
culture. As MIS you're likely seeing nearly everything from a "big
business" perspective, or at least what your professors believe is a "big
business" perspective. Meet the engineers and the computer science folks.
There's a lot to learn from them. There's also things they can learn from
your MIS knowledge, although probably not in the realm of pushing bits.

As for the professor who doesn't want to experiment with new things, wake
him up if you can. Anyone in computing who doesn't want to experiment with
new things is just marking time towards retirement. Not trusting open
source is an excuse. He could easily install Linux on a junk machine and
risk nothing while he learns. One thing he would learn is his opinion does
not prove to be correct.
