I upgraded from iso images and did not have any problems. You will need to run up2date as soon you get it back up and running to avoid security problems. It pretty much did everything automatically. I used workstation. If you have postfix installed and do not select and install sendmail it will upgrade just the package you have installed. I even let the up2date do the kernel update after I updated everything else, no problem there either. 7.3 Evolution is broken and needs updating just to work. I think upgrade will make a backup of your httpd.conf or it will install the new one as httpd.conf.newrpm. You may want to tar the /etc directory and other important files and place them in your home dir. At this point and time, I can't believe RedHat still ships with broken code, but it does. With up2date it makes it easier if you have dsl/cable, but I expected better from a large company. In fact, "most" of the packages in the 7.3 tree will run on 7.2. I have not viewed the changelog in detail but you may want to take a look at it.
