Downtime and problems are avoidable. To minimize problems, I recommend that you duplicate your server on another machine and run the upgrade once or twice, noting problems and testing the upgrade where it won't impact your customers. Depending on your execution, you can probably even reduce downtime to a matter of *seconds*. I use "apt" to upgrade servers live, and unless I feel that I need to reboot to use the latest kernel, each service can be restarted after I update the software, and downtime is only the amount of time it takes the server to stop and then start. If you can duplicate your server on a secondary machine, I recommend trying an apt upgrade.
