Booting from a RAID-1 has no special issues except upon a disk failure, where you might have problems with disk/partition naming (/dev/sdb might become /dev/sda). The problems arise if you try to place your kernel image in a RAID-0 or RAID-5 volume. I think the best bet is to use a small /boot partition for your kernel images and have it be a RAID-1 volume.
