Just type...

bash# chkconfig --list

And remember than "man" is your friend. Deciding on what you wish to run or not depends on what you plan to do. RH8 is pretty nice about turning most superfluous services off as default, but you may still be able to trim it down.

It really just depends and personal pref. has something to do with it too ;-)
