Hi Shane, I have 90 pounds of Fiji in my 55 gallon tank along with about 10
of manano from an old tank, so about 1.8 pounds per gallon for me.  I
thought about getting less rock but I can always take some out and put it in
other tanks.  I think I could have gotten away with about 40 pounds of rock
for filtration but I like overkill and this left me with flexible
aquascaping.  Also, the more rock you get, the better diversity you get, and
the more filtration, etc.  It looks a little crowded right now because of
all the manano from my old tank and some new mushroom rocks, hopefully this
will be gone soon after I think of a reason to setup a new tank.
