Lots to consider. Will they be uploading the video via WordPress's media uploader? If so, you need to pay attention to file size & the PHP memory limits the server may have in place.
As far as displaying the video in a Post / Page, I like Viper's Video Tags plugin. Video formats - I like mp4. Best quality / size relationship I've seen. Cheers!
