The jquery and jquerymobile.com sites themselves are probably the best since most of the books lag behind and the online documentation is quite good. Especially for jQuery mobile since it was just released.
There is a blog http://www.learningjquery.com/ that is updated frequently and an online book http://jqfundamentals.com/book/book.html that very recent. There is an O'Reilly book called Building iPhone apps with HTML, CSS, and JavaScript, but some of the examples use jqTouch (jqtouch.com), which will probably be made obsolete by jQuery mobile.
