For most cases, you can program them as radios and leave blank the
unused half of the radio. Receiver has RX frequency only and the
Transmitter has only the TX frequency.
If you try to program it as a repeater radio, the software will
often try to verify the radio firmware is the proper type. ie you
paid the money for the actual repeater radio. Little is more fun
than the Motorola Software Version fart in your face while
programming a radio. Right up there with "serial bus error"...

In most cases yes, but it depends on the model of the rick. The
more advanced ricks don't have all the options enabled.

If you don't find it on the web, I probably have the rick manual
available to scan sometime next week (after the holiday). I could
send you scanned copy (pdf format) free of course at the end of
next week. Just contact me next week if you need the book...
I've been selling the heck out of a simple after-market single
user repeater rick for about $65 each, complete with cables if
you get crazy playing with the motorola rick.
They are not really that hard to make if you can find the plugs
and parts. On board time out timer(s) and level controls make a
very nice uhf & vhf repeater.
