This PR aims to drop `Java 26` from the unit test matrix of GitHub Actions CI. - Remove `26` from the `java-version` matrix of the `Build Test CI` job in `build_and_test.yml`. - Apply `-XX:+UseCompactObjectHeaders` to `Java 25` only. `Java 27` enables it by default via [JEP 534](https://openjdk.org/jeps/534). - Update `AGENTS.md` accordingly. ### Why are the changes needed? `Java 26` is a non-LTS release that has been superseded by `Java 27` (September 15, 2026), which is already supported via SPARK-60287.
