@srowen, maybe it sounds (super) stupid. However, what do you think about
disabling unidoc build only in that machine via environment variables?
I assume we are checking `AMPLAB_JENKINS_BUILD_TOOL` and
`AMPLAB_JENKINS_BUILD_PROFILE` here

So, probably, I could just add a if-else via `AMPLAB_JENKINS_BUILD_TOOL`
and `AMPLAB_JENKINS_BUILD_PROFILE` as a band-aid fix.
