There are options for using physical CDs / DVDs as well...

While I hate to use non Fedora or Redhat docs... since this was the best I
found...  Please see here.

It lists xen options.

The Xen VM Manager within RHEL5 and Fedora are VERY good as well... Should
be pretty straight forward if you use that too.
