I use mrepo [1] to create a local copy of Remi's RPMs for PHP [2]. Once I test things out and make sure that everything works correctly, I copy that repository to my "stable" location and use it for my servers. When there are newer PHP packages coming into Remi's repository, I lather-rinse-repeat to make sure that all my stuff is functioning properly. This way I don't have to build things locally on my own. I can also recommend Remi's packages as very well-done, as he's also one of the main PHP packagers for Fedora proper.
