Both of those applications use the GTK+ print dialog, so gtk2 is the component to file a bug report against. The "don't respect default printer" bug is already known: https://bugzilla.redhat.com/show_bug.cgi?id=157878 (although this is filed against libgnomecups, comment #5 notes that it applies to gtk2 as well) -- however, if a new bug report were to be filed against Red Hat Enterprise Linux 5 that would at least make it easy to track.
