Both of those applications use the GTK+ print dialog, so gtk2 is the
component to file a bug report against.

The "don't respect default printer" bug is already known:

(although this is filed against libgnomecups, comment #5 notes that it
applies to gtk2 as well) -- however, if a new bug report were to be
filed against Red Hat Enterprise Linux 5 that would at least make it
easy to track.

The encryption-required bug definitely needs a new bug report.
