We use acronis, but it can be a bear to get installed and working.
Once working, it does a pretty good job.

I've been asked to look at ways of creating backup images of the / and
/boot partitions, as well as the bootloader and partitioning scheme for
some of our machines. The requirement is that we do this whilst the
machines are running, as it's not practical to reboot them all
regularly. The basic idea being that if a machine has a complete
meltdown we can restore the OS and partitioning scheme as quickly as
possible, and then begin restoring data from other backups.
