I suggest option 3:

download all of the rhn updates into an "updates" folder on the server, run "createrepo". Add a "repo" line to your kickstart file. The installer will find the latest updates and use them. This approach allows you to kickstart from a base 5.7 iso and only have to modify the "updates" folder.
