With your criteria there is no clear winner, although ALAC is probably
the closest. Whilst itunes may not let you convert it out to other
formats I'm pretty sure there are other tools that will (look at foobar
and dbpoweramp). 

This is the problem I have with Apple - people get suckered in by the
pretty lights and then have to jump through crazy hoops to get the
functionality they want. Incidentally - there are other music managers
out there which beat the crap out of iTunes. Take a look at JRiver for
slickness, or foobar for ultimate power.
