The ReplayGain algorithm is built into the FLAC encoder. You have no other software to install, all you have to do is specify "--replay-gain" in the encoder arguments to have it calculate and write track gain.
SlimServer should then show this as a Volume Adjustment. Regarding album art, the new FLAC 1.1.3 supports adding it to the file directly. Tag editing software hasn't caught up with this feature yet - currently you'll have to use metaflac, FLAC's own command-line tagger. But the easiest way is just to put it in with the album directory.
