Anne, sorry but mp3tag has got to be one of the most self-explanatory,
easy to use, yet powerful taggers out there.  I've been using it for
years and have tagged tens of thousands of FLAC and mp3 tracks with it
without incident or unexpected behaviour.

I don't use iTunes but I'm presuming both slimserver and iTunes need
their databases refreshed to deal with the changes you're making.

Have you set the artist tag as Dire Straits, Mark Knopfler or a
combination thereof?  Have a look at the artist tag for each of the
tracks making up the album in the mp3tag window and ensure they're the
same.

Check ARTIST tag as outlined above.

Check your slimserver config to see which image files/filenames it will
regard as coverart and in what order.   In my case I specifically name
all coverart for tagging purposes "folder.jpg"
As for the numbering I suspect you may have Vorbis and ID3 tags in your
files.  Is mp3tag configured to delete whichever tags m4a files don't
use/support?
