You should really use aac not mp3 of course! apple lossless eats batteries at five times aac and is overkill. dbpower amp i think is about the only program but it has limited album art support (if you have video ipod then you really want the art) and costs money besides being ugly :-) you could convert all your flac to wma lossless and then inport into itunes (if you have prog to do that) which is what i have been doing until recently. i have have been beta testing this app pictured which does album art and flac->aac. it works ok and is due to be released in a week at www.exceltagger.com
