I am also moving away from iTunes.
Last week I bought dbPoweramp - http://www.dbpoweramp.com/ - to re-rip
everything in FLAC. Mp3tag - http://www.mp3tag.de/- is the best tagger
around.
Right now I'm about to download FooBar - http://www.foobar2000.org/ -
and try it as a library manager/local player.

I also use Music IP - http://www.musicip.com/ - with SlimServer. MIP
playlists are read automatically by Slimserver and MIP also provides
advanced creation of mixes based on a nominated song. (Lots of threads
on Music IP, for example

The main issue (as I see it) in moving from iTunes is deciding on the
directory structure for your library of ripped CDs. I have adopted the
iTunes model - Library, Artist, Album, tracks. MIP allows you to easily
use several libraries, enabling me to have a Classical library and
several others based on the source of the CDs. dbPoweramp is easily
configured to any library structure.
