I prefer EAC for ripping - once set up, it's easy to insert and rip.  I then 
use Mp3Tag to add any additional tag info (eg. ALBUMARTIST, BAND, COMPILATION, 
COMMENT tags).

I use dbPowerAmp primarily for converting from one format to the other.  I 
didn't like the ripping interface.  Naff UI.  I particularly don't like that it 
insists on storing disc tags (even disc 1/1 for single disk albums), and that 
the only way to stop those tags was to add a post-rip instruction to remove the 
tag.  It also doesn't seem to asynchronously encode to FLAC - so I have to wait 
until the whole disk is ripped and encoded as FLAC, before ejecting to insert 
the next disc.  I think I had other issues with it, before deciding that I was 
more than happy with EAC still for doing the actual rips.

I tried Media Monkey as an alternative to iTunes - i.e. was going to use it 
just for syncing any music content to an iPod Nano (as it can transcode FLAC).  
I'd never use it for ripping or tagging, as other programs are superior.  
Unfortunately, I didn't like Media Monkey much - it seemed just as naff as 
iTunes.  I may revisit it sometime.
