FYI: -Mp3tag- does -not- show -all- tag frames in the file, only the tag
frames it -knows about-. (Which are quite a few, but there are zillions
more …)

So you can easily end up with lots of tags you don’t know about,
at least for ID3v2, i.e. PRIV, SEBR, SEFC, XSOP, and so on.

If you just want to -remove- all tags you don’t want,
there’s a 2-step process that works:

  
- Assuming all your options in Mp3tag are set correctly, you can mark
  the file(s), use CTRL+R to -remove- ALL tags, then immediately use
  CTRL-Z to restore (undo) the tags. This will effectively only write
  back the tags Mp3tag -knows about- and can show in »Extended Tags«
  view.
- Use »Extended Tags« (right-click, context menu) to delete/change
  those you don’t want; or make an »Action« called »Remove fields
  except…«.

The only programs I know of that -really- display -all- tags (at least
in MPEG files) are costly, professional MPEG stream editors. Or a cheap
text editor. ;-)

Another thing you might try that displays -a lot- (but not -all-) tag
frames in ID3 tags is 'Tycho’s -metamp3-'
(http://www.hydrogenaudio.org/forums/index.php?showtopic=49751), a
command-line tool. Preferably use v0.92 beta 5.
