Typically for an album with a backing band I pretend the backing band doesn't exist. There are (or can be) too many variations to care about bands. "Tom Pety & the Heartbreakers" becomes just "Tom Petty", because that's where I expect to find the album. A similar problem is the dozens of variations you can have for a jazz artist's bands - The Buddy Jefferson Quartet, The Buddy Jefferson Quintet, The Buddy Jefferson Septet, The Buddy Jefferson Big Band, etc. They just become "Buddy Jefferson", or else you end up with a lot of clutter that doesn't organize your music any better.
For an album that really does have multiple artists, I tag each artist. Use a separator, or you can also use two ARTIST tags in FLAC files (done in Mp3tag by separating them with double backslashes: \\). This is essentially your #2. What you're seeing on the Controller, where it displays only one of the artists, is a bug.
