For me it would be ARTIST Beethoven, ALBUM Beethoven Sym #3 Berliner Phil, Herbert Von Karajan. Then a 2nd ALBUM folder for the next sym etc.
If as R. Johnson states the sym is split over 2 discs I would then combine them into one folder and tag and renumber tracks appropriately.
